2022 Estate Cabernet Sauvignon
Tasting Notes
The nose is met with dark fruits, including plum and cassis. The rich fruit is followed by aromas of allspice and cedar. In the mouth, the tannins are mouthfilling and plush, offering a rich and distinctly long finish.
Vineyard Notes
When making our Cabernet Sauvignon, year after year there was a corner of our oldest block that produced wine with exceptional structure and depth. The block, planted adjacent our tasting room on the upper reaches of our Estate vineyard nearly 40 years ago, sits on a particularly rocky outcropping of Lava Cap. It is here, where the Lava Cap soil is the least decomposed, we find the highest expression of the rich flavors our Cabernet Sauvignon is known for.
Our 2022 Estate Cabernet Sauvignon is a selection of our best barrels from our oldest Cabernet Sauvignon vines. Planted in 1981, these vines yield a wine that is exceptionally concentrated, elegant, and rich. Picked and fermented separate from our El Dorado Cabernet Sauvignon, our Estate Cabernet Sauvignon is the pinnacle of high elevation Cabernet Sauvignon.
Winemaker Notes
The grapes were hand picked over 3 days in late October. The grapes were hand sorted, destemmed, and lightly broken before entering the fermenter. After a 5 day cold soak, the must underwent fermentation, never exceeding 82 degrees. During fermentation pump overs were performed twice a day to gently extract flavors and tannin. The wine was aged in 100% French barriques, 20% new, undergoing 1 racking prior bottling.
