2023 Viognier
Tasting Notes
Lava Cap's 2023 Viognier is grown at 2700ft, where our high elevation vineyard enhances the aromatic intensity of the grapes. This rich wine is supremely elegant and has apple, and pear flavors and finishes with pronounced minerality. This Viognier arrives with a lovely perfume of Daphne followed by generous flavors of freshly sliced apple and anjou pears. The lovely acidity frames an elegant finish of jasmine tea with a drop of honeysuckle.
Winemaker Notes
Half the wine was barrel fermented and aged in large format French oak barrels, while the other half is fermented and aged in stainless steel. Our use of Bungundian aging technique requires patience and extra attention to detail but it yields a rich body and velvety mouth feel, while reserving 50% of the blend for stainless steel aging preserves the wines vibrancy and freshness. This wine did not undergo malolactic fermentation to preserve freshness and acidity.
